
As I have mentioned in past posts, my son cannot eat white flour, only whole grains. He also cannot eat maple syrup. These limitations have cut our weekend breakfast options, and I for one, have missed the sweet flavours of pancakes. Last week I went on a search for maple syrup without the syrup….I know, can there be such a thing? Well there is, believe it or not; and E.D. Smith makes one! It is flavored with grape juice and sucralose, and miraculously tastes like the real thing (just not quite as thick). So the syrup problem is solved- on to the pancakes-
Whole Wheat Pancakes (very tasty)
2 1/3 cups whole wheat flour
3 Tbsp sugar
1 tsp baking soda
1/4 tsp salt
2 large eggs
1/2 cup sour cream
2 cups milk
Mix the ingredients until lumpy; do not over stir.
And there you have it…the healthiest breakfast with all the taste….ENJOY!
