What Can I Do With 2 Uneaten Crackers? A Meatloaf Recipe!

I don’t know what it is with morsels of uneaten food in a box of crackers, cereal, or cookies. Why is it that nobody wants to finish the last 2 crackers? It doesn’t annoy me any more, however, now I just make meat loaf or meatballs for spaghetti sauce.  The best crackers to use are flavored Triscuits- Black Pepper ones are great!

Here’s a recipe for yummy, easy meatloaf or meatballs to use up those unfit “lasts”.

1 lb lean ground beef

2+ crackers made into crumbs

1/2 tsp dry mustard

salt and pepper

5 TBSP Salsa

Mix meat, crumbs, dry mustard and salt and pepper in a bowl. Add 2 TBSP Salsa and mix. Put into loaf pan and cover with remaining Salsa. Bake at 375F for 60-75 minutes. Serve with any comfort food, such as scalloped potatoes, mashed potatoes, rice or pasta. Add a side salad for veggies. Enjoy!
