George Erdosh left a pleasant comment on my site the other day, so I visited his site. He has published books, such as Tried and True recipes. On his site there is a lot of useful cooking and kitchen tips and delicious recipes. For example:

The roast is on sale in the supermarket so you buy two and throw one in the freezer for a future meal. Bad idea. Proper freezing and thawing of meat, poultry and seafood are keys to tender and juicy foods with good flavor.

Here is how to imitate commercial freezing at home:

  1. Cut whatever you freeze in small portions: chicken in serving sizes, meat in bite-sized pieces or leave as steaks and chops, fish is usually not large enough to break down.
