This is a great recipe that was given to me by one of my past co-workers and it is a recipe that the kids can help with...it never lets me down, whether I make muffins or bread:
3 large ripe bananas (you can get away with 2)
1/2 cup white sugar
1 egg- beaten
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/2 cups flour (you can substitute with whole wheat flour)
1/3 cup melted butter
Mash bananas. Mix all of the ingredients, adding chocolate chips or nuts if desired. Bake at 350F for 30 minutes for muffins and 40-45 minutes for the bread. Makes 12 medium muffins or 1 nice loaf.
