Meat On A Stick Recipe

My 3 year old has a difficult time eating meat. He usually doesn’t enjoy fresh meat, but will eat bologna and hotdogs in a heartbeat. His special diet does not allow any processed meat and there is only so much peanut butter and eggs a 3 year old can ingest. My job, lately, has been to make meat meals as interesting as possible. He enjoys kabobs a.k.a.: Meat On A Stick. Here is a simple and delicious recipe for chicken on a stick guaranteed to please your little ones:

1 boneless/ skinless chicken breast will yield 3 good sized kabobs

1. Cut chicken lengthwise about 5 mm thick (note:chicken is easier to cut thinly when partially frozen)

2. Marinate cut chicken in Italian dressing for 2 hours prior to skewing

3. Skew chicken (about 3pieces per skewer)

4. Bake at 350F for 30 minutes brushing with more Italian dressing when they are about 8 minutes from being done

5. Serve on skewers with rice and vegetables.
