Get 3 meals + Baby Food out of One Pork Roast

Here are 4 recipes to get out of one pork roast. Buy a large enough pork roast for your family size that would give you leftovers (about 2 lbs per person).

1.Maple Mustard Pork Roast

1
seasoned centre-cut boneless pork loin roast about 3 lb (1.5 kg)
1 tbsp (15 mL)
vegetable oil
1/4 tsp (1 mL)
each salt & freshly ground black pepper
2/3 cup (150 mL)
100% Pure Maple Syrup
1/3 cup (75 mL)
Prepared Dijon Mustard

Instructions
  1. Preheat oven to 400° F (200° C).
  2. Rub pork roast with oil. Sprinkle with salt and pepper. Place in shallow roasting pan. Stir together maple syrup and mustard; pour over roast. Pour 1 cup (250 mL) water into pan.
  3. Roast uncovered in centre of oven for 20 to 25 minutes per lb/ 500 g or until meat thermometer inserted in centre reads 160° F (71° C), basting every 20 minutes with pan juices. Add more water to pan as needed to keep pan drippings from burning.
  4. Let stand 10 minutes before slicing. Serve with pan drippings.

2.Tangy Sliced Pork Sandwiches

  • 1/4 cup butter
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons white sugar
  • 1/4 teaspoon paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/2 pound boneless pork, cooked and cubed
  • 4 hamburger buns

DIRECTIONS

  • Melt butter or margarine in a large saucepan over medium heat. Add the Worcestershire sauce, lemon juice, sugar, paprika, salt and cayenne pepper. Mix together and bring mixture to a boil, stirring often. Add the cooked pork and let simmer just until pork is heated through. Divide into 4 equal portions onto the bottom of each hamburger bun.

3.PORK MINESTRONE SOUP

2 teaspoons olive oil
1 large onion, chopped
2 teaspoons minced garlic
14 1/2 ounces diced tomatoes with Italian-style herbs, undrained
21 ounces canned beef broth
1 (16 oz) pkg ounces frozen bean and carrot blend
19 ounces canned cannellini beans, drained
1 medium potato, peeled, cut into 1/2-inch pieces
1 medium sweet potato, peeled, cut into 1/2-inch pieces
1 tablespoon Worcestershire sauce
2 teaspoons dried basil, crumbled
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound cooked pork roast, cut into 3/4-inch cubes
5 tablespoons freshly shredded Parmesan cheese

In large Dutch oven, heat oil over medium heat. Saute onion and garlic about 5 minutes or until onion is tender, stirring often.

Stir in next 10 ingredients. Bring to boiling; reduce heat, simmer, covered about 15 minutes or until vegetables are crisp-tender.

Stir in pork cubes; and cook 2-3 minutes or until heated through.

TO SERVE:
Ladle portions into each soup bowl; sprinkle each with Parmesan cheese.

4.Pork and Apple Puree

6 ounces (180 grams) lean pork
6 ounces (180 grams) potatoes
6 ounces (180 grams) turnip
1/4 onion
1/4 apple
1 1/4 cups water
1 pinch sage

Pork- cut into small pieces and remove excess fat. Vegetables-peel and cut into 1/2-inch cubes.

Peel apple, remove core and dice small. Place everything in a saucepan and let simmer until well cooked. Puree in blender and freeze in cubes.
